Egg Fried Rice
This is a favourite Chinese dish of ours. So simple and quick to make.
Ingredients
serves 4
1 tbsp Groundnut oil
2 eggs
100g peas
350g cold leftover cooked rice
2 tbsp light soy sauce
1 tbsp toasted sesame oil
1 spring onion
Pinch of salt
Pinch ground white pepper
Fresh coriander
Method
Heat the wok over a high heat then add the groundnut oil. Pour in the beaten eggs and leave to settle for a minute or two before stirring them with a wooden spoon around the wok to lightly scramble them.
Then tip in the rice and stir well to break it up. Add the peas and toss well together.
Add the soy sauce, toasted sesame oil and season with salt and pepper to taste. Add the spring onion and fresh coriander. Mix well and remove from the heat. Serve immediately.
