Cheonggyeongchae doenjang-muchim
Having bought some doenjang (fremented soybean) I was on the look out for more recipes that used this strong flavoured paste. I stumbled across this Korean bok choy recipe which was super quick to prepare and very tasty.
Ingredients
450g bok choy
1 garlic clove, finely chopped
1 spring onion, finely chopped
2 tbsp doenjang(fermented soybean paste)
2 tsp gochujang (hot pepper paste)
1 tsp sugar
2 tsp sesame oil
2 tsp sesame seeds, toasted
Method
Mix together the doenjang, gochujang, garlic, spring onion, sugar, and sesame oil and stir well to combine the ingredients.
Prepare the bok choy by slicing off the ends and separate the leaves from the stalk. Cut the larger leaves into bite-sized pieces. Rinse with cold water to clean.
Bring a pan of water to the boil and blanch the bok choy. Cook them for about 2-3 minutes until the white section just softens. Remove from the water and rinse in cold water to stop the cooking process.
Remove any excess water before adding the bok choy to the sauce. Stir thoroughly.
Sprinkle with the toasted sesame seeds and serve immediately.
