Saganaki

There's nothing more indulgent than fried cheese. It's so bad for you but worth it!

Saganki, which is Greek for the traditional type of frying pan used, goes great as part of a meze but its also just fine on its own as a snack. This is not a recipe as such, you just flour up some cheese and fry it. Job done.  It's traditionally made with Kefalotiri cheese but that's not suitable for vegetarians. Halloumi is a good alternative or a veggie friendly Italian hard cheese.

Ingredients
100g vegetarian hard cheese, thickly sliced 
Plain flour
Olive oil for frying
1 Lemon

Method
Wet the cheese with cold water then dip into a bowl of flour, enough to cover both sides. Shake off any excess flour. If the flour is struggling to stick you could dip the cheese in some egg first.
Heat the oil in a frying pan to a medium high temperature then add the cheese and fry on both sides until golden. 

Serve hot with a squeeze of lemon or alternative drizzle with some honey and toasted sesame seeds.
