Börek

Böreks come in all shapes and sizes and fillings. This simple cheese börek recipe is one of my favourites and always brings back memories of late night street food gorging in Lublijana, Solvenia.

Ingredients
(serves 4)
400g filo pastry
500g Cottage Cheese
125g Feta cheese, crumbled
2 free-range eggs, lightly beaten
100g butter, melted

Method

Mix together the cottage cheese, crumbled feta and the beaten eggs.  The consistency will be quite runny but that's OK.

With one sheet of filo pastry brush the melted butter over half then fold over to make a double layer. Spoon in 2 or 3 large spoonfuls of the cheese filling and spreaacross the top in a line. Fold over the pastry on both sides about 1cm, then fold the long edge over and roll to make a tight cigar shape. 

The pastry could be kept as a straight roll or laid out in a coil. Either way grease the bottom of a baking tray oblong or circular and place in the cheese filled pastry. Repeat the steps until the coil is complete or the baking tray has been filled. Brush the top of the pastry liberally with melted butter.

Pre-heat the oven to 180C.  Bake for 35 minutes until golden brown.

Serve immediately.
