Homity Pie

I first tried this pie straight off the supermarket shelf. It was made by a company called Higgidy . It was so delicious I set off to find a recipe. I found several variations and combined the most common ingredients that more closely matched the Higgidy's Homity Pie ingredients.

Ingredients
300g Wholemeal Flour
100g Butter (softened)
3 tbsp Cold Water
350g Potatoes, peeled            
250g Onions, peeled and roughly-chopped  
250g Leeks, washed  and cut into small bite-sized pieces 
3 tbsp Vegetable Oil   
25g Butter (plus a little to line the pie tins)  
300g grated Cheddar Cheese              
2 cloves of Garlic, peeled and finely-chopped      
60ml Single Cream (or Milk)  
2 Eggs, lightly-beaten       
small bunch of fresh Parsley   
large pinch of fresh chopped  thyme   
Salt and freshly-ground Black Pepper to taste    
pinch of Cayenne Pepper         

Method

Put the flour and butter into a large bowl. Using a fork mash the butter into the flour until it resembles breadcrumbs. Stir in the water and quickly bring the pastry together into a slightly sticky ball of dough. (Add a few more drops of water if this does not happen easily)
Wrap in film and rest pastry for at least 15 minutes.

Put the pastry out on a floured surface and roll out the pastry to the desired thickness and size.  Lightly butter the pie tin. (approx. 20cm)  and carefully line the pie tin with the pastry. Cut away any pastry that hangs over the edge of your dish.   Chill the tins while you make the filling.

Steam the potatoes until they're tender - then chop them into bite-sized pieces.

Sauté the chopped onions and leeks over a gentle heat in the vegetable oil, until they're soft.

Add the garlic, followed by the potatoes, butter, parsley and thyme, the eggs, half the cheese and the single cream.

Season with salt and pepper and combine the mixture well together. Don’t over mash however, leave some bite to the mix.

Fill the pie and cover them with the remaining cheese. Sprinkle over some cayenne pepper. 

Bake in a pre-heated oven 220C for 20-25 minutes, until golden.
