Chilli Cheese on Toast


We ate this for the first time in hotel in Udaipur, India. I had been consistently eating nothing but curries for breakfast, lunch and supper and turned my nose up at Julie's choice of "cheese on toast". But when it arrived it was just the most amazing comforting snack...EVER!  

Back home it has now become one of our regular favourites.

Ingredients
400g Cheddar Cheese, grated
50g Onion, finely chopped
1 Tomato, de-seeded finely chopped
30g Fresh corriander, finely chopped
2 Green chilli, finely chopped
2 Red Chilli, finely chopped 
4 slices of white sliced bread

Method
Pre-heat the oven to 200C. Mix together all the ingredients except for the bread. (Deseed the chillies if you prefer.) Pile the mixture evenly on top of the bread and bake in the oven for 10 minutes until the bread is crisp and the cheese is browning. Serve hot.

The verdict
This just has to be tasted to be believed. It's so tasty.
