Aldi's Savoury Hong Kong-Style French Toast


 

I have to thank the supermarket chain Aldi for this awesome sandwich recipe, a savoury Hong-Kong-style French Toast. Layers of bread, like a club sandwich, with cheese and marmite, then dipped in egg and fried. It was absolutely incredible! 

Ingredients
serves 1 

3 thick slices of white bread, 
65g mozzarella, grated
65g cheddar, grated
20g Marmite
30g Unsalted Butter
3 Eggs
Chives, finely sliced
salt
pepper

Method

Bring the butter to room temperature.

Preheat the oven to 120°C. 

Mix the two types of cheese together in a bowl.

Spread the butter and marmite on both sides of  one slice of bread, and on one side of the remaining two slices.

Take a slice that has only been buttered/marmited on one side, place it butter-side up, add half of the grated mixed cheeses onto it and top with a slice of bread that has been buttered on both sides. Top with the remaining cheese and place on top the slice of bread that has only been buttered on one side, complete the sandwich.

Crack two eggs into a shallow dish, season with salt and pepper, and add the chives. Whisk together until thoroughly combined. Dunk the sandwich in the egg mixture until all sides are coated.

Drizzle enough oil into a frying pan so that the bottom is covered, place over medium-low heat. When at temperature, add the sandwiches, cook on all sides until coloured golden and the cheese has melted, 5-7 mins.

Once cooked, place them onto a baking tray, and place in the oven to keep hot. 

Return the frying pan to a medium-high heat with another 2 tbsp of oil. Once hot, crack in the remaining egg and fry until the whites are cooked through but the yolk is still soft, 3-4 mins.

Top the cheesy, savoury Hong Kong-style French toast with the fried egg. 

Season with salt and pepper. Sprinkle over a few spare chopped chives.

Then cut it in half and tuck in. Knife and fork is optional!
