Brandy Sauce
Christmas Pudding, no matter how delicious, is not the same without some Brandy Sauce!
Ingredients
50g butter
50g plain flour
500ml milk
50g sugar
3 tbsp brandy
Method
First melt the butter in a small saucepan. Turn the heat down to a medium-low temperature then add the flour. Stir well with a wooden spoon until all the flour has been incorporated into a paste.
Slowly add the milk, a little at a time, stirring rapidly in between pours. Repeat until it forms a thick sauce.
Add all the remaining milk, then the sugar and brandy. Cook gently for about 5 minutes or until the sauce has thickened.
Taste and adjust by adding more sugar or brandy to your own preference.
