Egg Drop Sandwich


Always on the lookout for something new I stumbled across this South Korean sensation on social media. It's a decadent twist on the more traditional Gigleori toast, or Street Toast.

It doesn't include any special Korean ingredients so it's perfect for knocking up at home.


Ingredients

makes 2

 4 slices from a brioche loaf, thickly cut

4 slices cheese (the processed plastic cheddar used to top burgers)

1 large avocado, sliced

4 large eggs

2 tbsp double cream

2 tbsp unsalted butter

1 tsp salt

pinch of finely chopped chives


for the sweet mayo

2 parts mayonaise

1 part condensed milk

Sriracha chilli sauce (optional)


Method

Start by preparing the sweet mayonnaise. in a small bowl mix two parts regular mayo with one part sweetened condensed milk. Pour the mayo mix into a plastic bottle with a nozzle to squeeze out later.  If you wish prepare another mayo mix with a splash sriracha sauce , to taste. 

Next, crack all the eggs into a bowl, add the double cream and salt and mix well.

In a large frying pan, over a medium temperature, melt half a tablespoon of butter, then add the four slices of brioche.

In another frying pan, also on a medium heat, melt a tablespoon of butter, then pour in the egg mix. Stir regularly to scramble the eggs. Turn the heat to low as not to overcook. 

When the brioche slices have coloured a golden brown on one side, melt another half a tablespoon and flip the slices over to colour the other side.

On a chopping board begin to construct the sandwich. Top all the brioche with a slice of cheese, then a layer of sliced avocado. Squirt liberally with your preferred combination of sauces and mayo.   

Ideally the sandwich is served upright, held in a small cardboard box. (I used an empty punnit I had with some tomatoes.) So place the two slices in the box and "drop" the scrambled egg in. 

Or if you're worried that it's going to get messy, add the scrambled on top of one slice on the chopping board, then place the other prepared slice over it.  You could serve it like that, horizontally or you could carefully slide it into the box. 

Squirt another drizzle of sweet mayo and/or sriracha combination and sprinkle over the chopped chives.
