This spiced potato specialty from Shimla, India was a delight to make and tasted wonderful, dipped into a mint and coriander chutney.

Ingredients

400g Mashed potato

75g carrots

75g  red onion

15g mint

15g corriander

salt

2 tsp garam masala

2 tsp chaat masala

2 tsp cumin powder

1 tsp poha (rice) powder

2 tbsp ginger/garlic pasta

4 tbsp flour

2 tbsp semolina flour

4 tbsp gram flour

cornflour (for dusting)

Method

Add all ingredients together and mix well into a dough.

Leave to rest for 30 minutes. 

Shallow fry in veg oil over a medium-low heat until brown and crispy.

Drain on kitchen paper.

Season with chaat masala and serve with mint and coriander green chutney.
