Mint & Coriander Green Chutney


No pakora or onion bhaji is complete without some green chutney on the side and a Mumbai Sandwich wouldn't be a Mumbai sandwich without it!

Ingredients

40g fresh coriander, leaves and stalks

20g fresh mint, leaves

2 green chillies, (deseeded if you prefer)

1cm cubed ginger - chopped

2 garlic cloves, chopped

½ tsp chaat masala (or ¼ tsp amchur powder)

½ teaspoon ground cumin 

1 tsp lemon juice 

2 tbsp vegetable oil 

½ tsp salt 


Method

Wash all the herbs in cold water. Pat dry on absorbent kitchen paper.

Place all the ingredients into a blender and whizz into a sauce, adding a little more oil a drop at a time to get the right consistency. Not too thick, not too thin. 

Taste and adjust the flavour to your own preference by adding more of any of the ingredients. 

Continue to blend until you're happy with the taste and consistency. 

Put into an airtight container and keep in the fridge until ready to use. Keep for a week.
