Rösti

 


A rösti is just shredded potato, seasoned and fried in butter. So simple yet so delicious. I'll awlays remember the one I ate, topped with a fried egg in a restaurant in Alpiglen whilst walking down the Eiger Trail.  It was a thing of beauty!

Ingredients
makes 1 large rosti

500g Potato
40g butter 
salt
pepper


Method

Peel the potato and coarsely shred. Place in a bowl and season well with salt and pepper. Tip out onto a tea towel or muslin sheet and squeeze out all the excess liquid.

In an 8 inch frying pan, melt half the butter, over a medium heat then add the shredded potato. Give it a good stir at first then spread evenly over the pan, pressing the mix down to compress it as much as possible. 

Place a lid on top and leave to cook for about 10 minutes. Check every now and again to make sure the base isn't browning too quickly.

Once you're happy it's cooked and crispy at the bottom, it's time to flip it over.  You do this by holding a plate over the top, like a lid, then in one swift move, flip it all over so you're holding the plate at hte bottom, and the frying pan on top.

Lift off the frying pan and place it back on the heat. Add the rest of the butter.

When it has melted carefully slide the half cooked rösti back into the frying pan. 

With a fork or silicon spatula tuck in the sides of the rösti to form an uniform edge.

Continue to cook for a further 5 minutes or longer until the base has cooked and crisped as much as the top.

Slide out of the frying pan onto a warm serving plate and serve immediately.
