Zapiekanka


Zapiekanka is a popular Polish street food, half a baguette, topped with sliced mushrooms, melted cheese and lashing of tomato ketchup. with a combination of any other toppings that take your fancy. It's often described as the Polish pizza and the possibilities are endless, the Hawaiian, the Greek etc!

Ingredients
makes 1 

125 g white button mushrooms, thinly sliced
50g Edam (or Gouda) cheese, coarsely grated
1/4 large onion, chopped
1 tsp garlic powder (granules)
5g butter
oregano
salt
pepper

to serve
1/2 demi baguette
tomato ketchup
mayonaise


Method 

Begin by gently frying the onion in butter until softened and colouring. 

Add the sliced mushrooms, a pinch of dried oregano and a teaspoon of garlic granules. Continue to gook for about 10 minutes. Season with salt and pepper to taste.

Preheat the oven to 180˚C. 

Cut the small baguette in half, lengthwise. Spread over the cooked mushrooms and onions evenly then top with the grated cheese. (Add other toppings now)

Bake for 5 minutes, or until the cheese melts. Place under a grill if you prefer the cheese to colour.

Squeeze over ketchup or mayonnaise (or both!) and serve hot.
