Bread & Butter Pudding
Bread & Butter pudding has to be one of my all-time favourite desserts. It's just so comforting on a cold winter's day.
Ingredients
(serves 8)
70g butter, for spreading
30g butter, cubed

750g sliced brioche or white bread
100g sultanas
400ml full fat milk
300ml double cream
300ml double cream
4 eggs, beaten
2 egg yolks
2 egg yolks
180g golden caster sugar (plus extra)
1/2 tsp vanilla extract
pinch of ground nutmeg
Method
Preheat the oven to 150C.
In a saucepan heat the milk and double cream up to boil before removing from the heat and allow to cool down to a lukewarm temperature.
In a separate large bowl Whisk together the eggs, sugar, vanilla extract and ground nutmeg, then gradually add the milk. Mix well.
Pour the custard back into the saucepan and return to the heat. Cook for a few minutes stirring constantly to make sure it doesn't catch and burn at the bottom of the pan.
Once it has thickened slightly (but not too much) pour into a large baking dish. Sprinkle half of the sultanas evenly into the custard.
Butter the brioche slices quite liberally on one side. Arrange them layered but at an angle in the baking dish. Sprinkle the remaining sultanas over the brioche. Dot the butter cubes evenly on top and sprinkle over a few teaspoons of the golden caster sugar.
Bake for around 50 minutes until golden brown.
Serve warm.
