Bread & Butter Pudding
Bread & Butter pudding has to be one of my all-time favourite desserts. It's just so comforting on a cold winter's day.
Ingredients
(serves 8)
180g butter
675g sliced brioche
100g sultanas
600ml full fat milk
4 eggs, beaten
6 tbsp golden caster sugar
1/2 tsp vanilla extract
ground nutmeg
Method
Preheat the oven to 150C.
Butter the brioche slice quite liberally on one sides. Arrange them layered but at an angle in a baking dish, sprinkling a few sultanas in between each slice as you go.
Sprinkle the remaining sultanas over the brioche.
Meanwhile in a saucepan heat the milk up to boil before removing from the heat and allow to cool down to a lukewarm temperature.
In a separate large bowl Whisk together the eggs, sugar, vanilla extract and ground nutmeg, then gradually add the milk. Mix well.
Pour the custard back into the saucepan and return to the heat. Cook for a few minutes stirring constantly to make sure it doesn't catch and burn at the bottom of the pan. Once it has thicken slightly pour it over the sliced brioche.
Bake for around 50 minutes until golden brown.
Serve warm.
