Popara


Whilst visiting Montenegro I wanted to make a traditional local dish that was suitable for vegetarians. There weren't many dishes to choose from but I did come across many combinations of cheese and bread. Popara, a savoury porridge made from stale bread seemed the simplest and most comforting of the dishes.

Ingredients
serves 4
350 g stale white bread  (3 days old, or more)
700 ml water
50 g butter
150g kajmak (something similar to a rich tangy creme fraiche)
250 g mature white cheese, (like feta)
salt, to taste

Method
Slice the bread, then break into small pieces. 

In a large saucepan bring 700ml of water to the boil then add the bread. Stir well to break up the bread.  When it begins to reach boiling again turn the heat down to a medium temperature.

Add the butter and stir well.  Once melted.

Add the kajmak and most of the cheese, keeping some for garnish later.

Stir and continue to cook until all the cheese and cream has been incorporated into the porridge.

Taste and season with some salt if necessary. (especially if the cheese is mild)

Serve immediately in a warm bowl with a tablespoon or two of the grated cheese on top.
