Completo Chileno



Tofu wieners are probably the only meat-substitute product that makes it onto my plate. So imagine my excitement when I came across this wonderful recipe for a loaded Chilean hot dog.  Topped with sauerkraut, tomatoes, avocado and mayonnaise it was so much fun to eat.

Let's just say things got messy quick!!

Ingredients 
makes 2
2 large long bread roll
2 Tofu wieners (vegetarian hot dogs)
2 large ripe tomato, deseeded, chopped
2 large ripe avocado
4 tbsp mayonnaise
4 tbsp Sauerkraut
salt, to taste

Method
Cut the tomato into quarters, deseed and then roughly chop into 1cm cubes. Season lightly with salt.
Cut the avocado in half and scoop out the flesh. Mash with a fork. Season lightly with salt.

In a large pan bring water a boil and submerge the wieners, boiling them for 5 minutes. Remove from the heat.  Meanwhile warm the rolls slightly in an oven on a low heat..

Construct the Completo Chileno buy cutting open the hot dog bun and place the hot dog into it.
Next load it with the sauerkraut, chopped tomatoes and then a thick layer of the mashed avocado.

Finish with plenty of mayonnaise down the middle.
