Bunny chow


This traditional Durban street food is such a great idea. There's no set recipe (although lamb curry seems to be the most popular) so it's a combination of any vegetables that take your fancy, curried up and dropped into a scooped out loaf.  Curry in a loaf - GENIUS!

Ingredients
serves 2
4 potatoes, cubed
200g fine green beans
200g butterbeans, cooked (or tinned)
1 medium onion, halved and thinly sliced
3 large tomatoes, chopped
3 tbsp vegetable oil
4 tsp hot curry powder (or a Durban masala spice mix)
5 curry leaves
1 stick cinnamon
5 green cardamom pods, lightly crushed
2cm ginger, finely chopped
3 garlic cloved, crushed
1 tsp turmeric
2 tsp garam masala
Salt
1 loaf, preferably crusty & square
Fresh coriander, chopped

Method
First peel the tomatoes. This is made easier if they are dropped into boiling water for a minute. Then roughly chop them.

Next, in a heavy based frying pan heat the oil on a medium temperature. Add the cinnamon stick, cardamom pods and curry leaves. Fry gently for a minute then add the onion.  Continue to cook slowly until the onion begins to colour, about 10mins.

Add the tomatoes, ginger, garlic , turmeric and the curry powder (or Durban masala).  Continue to cook until the tomatoes soften.

Then add the potatoes and about 100ml of water.  Bring to a boil then turn the heat down and simmer covered for about 25-30 minutes by which time the potatoes should be cooked. Stir gently every now and again. Add more water when the curry begins to dry out.

Taste the curry and season to taste with some salt and the garam masala. Add some chilli powder if you want it hotter. Add some paprika if you want a deeper red colour. Add the green beans and butter beans and then carry on simmering for another 15 minutes. Taste again and adjust.

Cut the loaf in half, (or possibly into thirds dependant on its length). Scoop out the bread leaving the crust to become the bowl.

Place the curry into the half loaf and serve, sprinkled with a little chopped coriander leaves.  You could also serve the inside of the loaf on the side to dip into the curry.
