Chocolate Flapjacks


My favourite snack to have with a nice cup of tea has to be Mr.Fudge's Milk Chocolate Flapjacks. They're not cheap so it was worth considering making a home-made version. 

Ingredients
makes 12-16

150g unsalted butter, plus extra to grease
40g demerara sugar
60g golden syrup
225g jumbo rolled oats
pinch of salt
200g milk chocolate


Method Preheat the oven to 160C. 

Line a 30 x 20cm baking tin with parchment paper, including the sides. Cut into the corners so it's a better fit. 

Melt the butter in a small pan then add the sugar, syrup and a pinch of salt. Stir well then take off the heat.

Add the rolled oats and mix well to try and coat all the oats. 

Press evenly into the baking tin (a potato masher worked well for this) and bake for 30 minutes.

One cooked carefully remove from the baking tin.  It will still be soft at this point. With a sharp knife cut into 12 or 16 pieces. (depends on how small/large you want the flapjacks. 

Carefully return to the baking tin, gently press them down again to compress the flapjack. Keep them in the tin and allow to cool completely. They should have hardened. 

Once the flapjacks are solid enough to handle melt the chocolate in a bowl suspended over a pan of boiling water.

Dip the flapjack squares into the chocolate along two sides only, using a teaspoon to coat further up to achieve a diagonal coating of chocolate across half the flapjack.

Allow to cool, then put the kettle on and put you feet up!
