Teisen Nionyn


This is a recipe for a traditional Welsh Onion Cake although I have to admit despite being Welsh and having lived here all my life I've never eaten one .... until now. 

Ingredients
serves 4
900g potatoes (floury variety) peeled and thinly sliced 
115g butter
450g onion peeled and thinly sliced
500ml vegetable stock
2 tsp fresh herbs such as thyme or rosemary, finely chopped
salt
pepper

Method

Preheat the oven to 190°C.

In a large oven proof frying pan fry the onions, on a medium heat. Add a pinch of salt and the chopped herbs. 

Turn the heat down and cover with a lid. Continue to cook slowly for a further 15 minutes, stirring often. The onions should be nicely caramalised. Remove from the pan and set aside.

In the same frying pan melt some butter on a low heat to grease the pan. Layer the potato slices overlapping each other to create an attractive base. Season well with salt and pepper then add a layer of onion. Finish with another layer of potato.  

Pour over the vegetable stock and add any remaining butter on top.

Cover with a lid  and bake in the oven for about one hour, removing the lid for the last twenty minutes. 

Test the potatoes are cooked with a sharp knife. Continue to cook if required.

Turn out onto a serving plate. Season with salt and pepper and sprinkle with a little chopped herb.
