Guacamole

I love guacamole especially this chunky version where it's almost a cross between the smooth shop bought variety and a fresh salsa. 

Ingredients
3 ripe avocadoes
2 lime, large, juiced
1 red onion, finely chopped
1 tomato, chopped
30g coriander, finely chopped
1 Jalepeño pepper, finely chopped 
salt


Method

Slice the avocados in half. Discard the large seed. Scoop out of shell with a spoon and roughly chop.  Place in bowl.

Add juice of one fresh lime immediately to prevent browning.  Add the chopped onions, tomato, Jalepeño pepper and the coriander. Stir well to mix the ingredients mashing slightly with the fork.  Add more lime juice and the salt to taste.  Best served immediately otherwise cover the bowl with clingfilm and refrigerate until ready to serve.
