Beid bil Jamriya

Scrambled egg with dates - whatever next !  We came across this recipe in a great Middle Eastern cookbook called Veggiestan. It tasted a lot better than it looked!  In fact it was delicious, incredibly sweet, and that hint of cardamom was just perfect.
Ingredients
serves 1
100g dates, pitted
1 egg, large free-range
4 cardamom pods, seeds crushed
10g butter
Method
Crush the cardamom seeds with a pestle & mortar. Then roughly chop up the dates. 
In a large frying pan melt the butter and add the chopped dates. Cook for a couple of minutes.  Next quickly whisk up the egg and pour over the dates, stirring constantly for a few more minutes until the egg has cooked.
Serve immediately sprinkled with the ground cardamom.
