Shopska Salad

This is a Bulgarian salad that's only subtly different to the Greek version. It's made with a cheese called sirene but if that's not easily available then feta can be used, making it even more similar to a Greek Salad! The few times I ate it in Sofia the cheese was quite finely crumbled and mixed thoroughly into the salad but it can be served grated and just placed on top.

Ingredients
serves 2
4 tomatoes, chopped into bite-size pieces
1 large cucumber, chopped as above
4 red peppers, roasted, skinned and chopped (or can be left raw)
5 spring onion, finely sliced 
1 tbsp chopped fresh parsely
2 tbsp olive oil
1 tbspl red wine vinegar
200g sirene cheese (or feta), crumbled or grated
Salt
Ground black pepper

Method
Shake together the olive oil, red wine vinger, a pinch of salt and pepper in a container to blend.

Put all the chopped vegetables and herbs in a bowl and pour over the vinaigrette and toss well.  Leave to rest and marinade.

Transfer the salad to another bowl with a slotted spoon to leave behind the excess vinaigrette then add the crumbled cheese and mix thoroughly.  Pour out onto a serving plate and tuck in!
