Mozarella in Carozza

What's not to like about a fried cheese sandwich! 

Ingredients
4 slices white bread, medium sized loaf
250g Buffalo Mozzarella 
3 eggs
100ml Milk
Flour
Olive Oil
Salt
Pepper
30g Basil  (optional)
6 sun-dried tomatoes (optional)

Method

Pre-heat the oven to 180C

Remove the crusts from the sliced bread, cut the mozzarella into 1cm slices. Place the mozzarella slices between the bread. Add chopped basil and/or sliced sun-dried tomatoes if you want.

In a bowl add the eggs, milk, salt and pepper to taste and whisk.  In another bowl place plenty of flour.   Place the cut sandwiches in the bowl making sure plenty of the flour sticks to the bread, including the sides.

Heat up plenty of olive oil to a medium-high temperature in a frying pan.

Dip the small sandwiches into the egg/milk mixture.  If they look like they need a better coating repeat the flour and egg/milk dip.

Place the little carriages in the frying pan and fry until golden brown on both sides.  Turn the heat down if they appear to be browning too quickly.

Remove from the frying pan and place on kitchen roll to remove the excess oil.  Keep warm in a pre-heated oven. 

Serve warm.
