Fig and Blue Cheese Salad

The sweetness of the figs and the saltiness of the cheese balance perfectly and with the chicory and walnuts adding a crunchy texture, a salad never tasted so good!

Ingredients
50g walnuts
250g Chicory (white)
140g Chicory (red)
4 Figs (ripe)
50g Blue Cheese (such as Gorgonzola or Stilton)
3tbsp Olive Oil
1 tbsp Red Wine Vinegar
1 tbsp Clear Honey

Method
Break the walnuts into pieces. Heat a frying pan over a medium heat and add the walnut pieces.Continuously for 1-2 minutes. Then leave to cool.

Make the dressing by mixing together the olive oil, red wine vinegar and honey.

Trim the base of the chicory heads then slice lengthways into quarters. Seperate the leaves and place in a large bowl. Toss through with the dressing.

Spoon the chicory onto a large plate, then place the figs, cut into quarters, on top.

Finish by topping with the walnuts and crumbled blue cheese. 

Drizzle with a little olive oil and a little honey on the figs.
