Skordalia

Skordalia, this lemony garlicky potato dip was another taste sensation we discovered during our trip to Kefalonia. 

My first attempt from a recipe found in a walking book was very nice mashed potato however since trying the real thing at Katerina's Hotel George Molfetas in Faraklata this recipe is much nearer the consistency.  

Ingredients
2 small potatoes
40g white bread (day old)
4 tbs olive oil
4 tbs lemon juice 
5 cloves garlic
salt

Method
Peel and boil the potatoes until soft. 

In another bowl mix the olive oil, lemon juice and garlic together then add the bread in pieces and allow to marinade whilst the potatoes boil.

With a slotted spoon lift out the soggy bread and put into a blender with the potato.

Blend the contents adding another third of the marinade. Taste.

Then continue to add the marinade until you have the right instensity and balance of flavour.
