Bara Brith
This is my grandmother's recipe for this traditional Welsh fruitcake. It's no different to anyone else's really, no secret ingredients. I guess you don't mess with tradition.
Ingredients
450g dried mixed fruit (such as sultanas, raisins and currants)
170g Brown Sugar
170g Self Raising Flour
225ml strong cold tea
1 egg
1tsp mixed spice
Method
Put the dried mixed fruit, soft brown sugar, tea, mixed spice and egg in a bowl and leave to soak overnight.
Next day fold in the flour and place in a greased loaf tin.
Baked in a pre-heated oven at 170C for about an hour or until a skewer pulls clean in the centre of the cake.
