Noodles and Beansprouts
Always a favourite of ours when ordering a Chinese take-away but it's so straightforward to make at home.
Ingredients
serves 2
200g Fresh Beansprouts
300 grams Fresh Medium Egg Noodles (or 200g dried noodles)
1 Onion, thinly sliced
2 Garlic cloves, finely chopped
4 Spring Onions, sliced, (seperated into white and green parts)
2 tbsp Mushroom vegetarian "Oyster" Sauce
1 1/2 tablespoons dark soy sauce
1 1/2 tablespoons sweet soy sauce
pinch of white pepper
1 tsp sesame seeds
1 tbsp Sesame Oil
1 tbsp vegetable oil
Method
If using dried noodles prepare as per cooking instructions. Drain and allow to cool in cold water.
Then in a large bowl drizzle the sesame oil over the fresh or cooked dried noodles.
Heat the veg oil in a wok over a medium heat. Add the onion and cook for 5 minutes until they become translucent.
Add the garlic, beansprouts and the white spring onion slices and half of the green. Cook for a further couple of minutes, continually moving and stirring the ingredients.
Add in the oiled noodles, veggie "oyster" sauce, soy sauce, and sweet soy sauce.
Cook for a further few minutes to until the noodles are warm. Season with a pinch of white pepper.
