Lettuce soup


Soups can be boring and to be honest this one isn't that exciting, however it is a great way to use up a glut of Lettuce and more importantly it was tasty.
Ingredients
(serves 4)
340g Lettuce, roughly chopped
125g potato, peeled and diced
1 onion, roughly chopped
1 garlic clove, chopped
3 tbsp vegetable oil
1 tsp ground coriander
salt
freshly ground pepper
750 ml water

Method
Pour some oil into a large pan and bring to a moderate heat. Add the onions and fry gently for 5 minutes until softened. Then add the garlic and spring onions. Continue to cook for a few minutes.

Add the ground coriander with a pinch of salt and pepper. Stir in well before adding the potato, lettuce, and water.

Turn up the heat and bring to a boil, then reduce to a simmer. Cover the pan and cook for 10 -15 minutes until the potato has cooked.

Then, using a hand blender carefully purée into a smooth soup.

Season with more salt and pepper, to taste.
